This year Chef Minaki will be collaborating closely with local Red Seal Chefs, Joe Sposato (Bight Restaurant) and Allan Rebelo (El Tres). Together with the talented team at Bight Restaurant, you will experience an extraordinary menu that celebrates the best of Greek and Mediterranean cuisine.

Also joining us this year, Certified Sommelier, Cale Graydon will be selecting our wines for this culinary journey of the Mediterranean. Born and raised in Thunder Bay, Cale was employed for many years by the celebrated Oliver and Bonacini Hospitality in Toronto. Cale has served as Bar Manager and Sommelier at both Canoe restaurant (ranked 8th in 2016 Canada’s Top 100 restaurants) and Luma restaurant, two of Oliver and Bonacini’s most celebrated restaurants.

Our evening will begin at 6pm in Mariner’s Hall as you are greeted by the music of flamenco recording artist Matt Sellick and treated to a delectable hors d’oeuvre paired perfectly with a wine selected by our creative culinary team and Certified Sommelier. After our symposium you will be seated at your assigned table in the dining room to enjoy five incredible courses each with a unique imported wine selection. Throughout the evening our Chefs and Sommelier will provide commentary on each dish and libation served, as we explore modern interpretations of Greek and Mediterranean cuisine.

Tickets are available from the Thunder Bay Regional Health Sciences Foundation @ 345-4673 or at healthsciencesfoundation.ca/greek. Limited seating available.
