Feature Recipe from the Thunder Bay Regional Health Sciences Centre's Fresh Market

Healthy, seasonal recipes are available for staff, patients, families and community members at Thunder Bay Regional Health Sciences Centre's Fresh Market, a farmer's market which runs every Wednesday from 11:00am to 1:00pm, June through October, in the Cafeteria Courtyard at our Hospital.

Yellow Plum and Blueberry Crisp

Serves 4

Ingredients

Fruit Filling

~450g yellow plums or other stone fruit, sliced and pitted

2 cups fresh or frozen (not defrosted) blueberries

Crisp Topping

1 cup rolled oats

1 cup walnuts, chopped

1/2 cup whole wheat flour

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

2 tablespoons maple syrup

2 tablespoons coconut oil (room temperature), butter (melted) or margarine (room temperature)

Directions:
  1. Preheat oven to 375ºF.

  2. Add fruit to a ceramic or glass 9-inch pie dish or 8x8-inch ceramic or glass baking dish. Mix to combine and spread in an even layer.

  3. In a large bowl, combine oats, walnuts, flour, cinnamon, and salt. Mix in maple syrup. Using your fingers, cut in coconut oil, butter or margarine until mixture is moistened. Spread on top of fruit.

  4. Bake for 45 minutes to 1 hour, until fruit is bubbling and topping is light brown. Serve warm, room temperature, or chilled with vanilla ice cream, lightly sweetened whipped cream, sour cream, or plain yogurt.
