Healthy, seasonal recipes are available for staff, patients, families and community members at Thunder Bay Regional Health Sciences Centre's Fresh Market, a  market which runs every Wednesday from 11:00am to 1:00pm, June through October, in the Cafeteria Courtyard at our Hospital.


Cashew Chicken Stir Fry

Yields: 4 servings


  • 1 tbsp olive oil

  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces

  • 1 zucchini diced

  • 1 red bell pepper cut into 1-inch cubes

  • 1 cup sliced mushrooms

  • ½ cup shredded carrots

  • 1 cup snap peas

  • 1 cup whole cashews

  • Optional Vegetables: ½ cup beet greens, kale, or garlic scapes


  • ¾ cup low sodium chicken broth

  • ¼ cup low-sodium soy sauce

  • 3 cloves garlic, minced

  • 1 tbsp maple syrup, or maple syrup sugar, or honey

  • 1 tsp sesame oil

  • 1 tbsp cornstarch

  • 2 tbsp water

  • Green onions sliced for garnish



  1. In a medium-sized skillet or wok over medium high heat add olive oil and chicken. Brown until almost cooked through and add zucchini, bell peppers, mushrooms, carrots, snap peas, and other desired vegetables. Cook until veggies are tender and chicken is no longer pink. Add cashews.

  2. Add chicken broth, soy sauce, garlic, maple syrup, and sesame oil to the pan. In a small bowl whisk together cornstarch and water to make a slurry. Pour into pan and stir until incorporated. Let simmer for 2 minutes or until sauce has thickened.

  3. Garnish with green onions and serve over rice if desired
