Healthy, seasonal recipes are available for staff, patients, families and community members at Thunder Bay Regional Health Sciences Centre's Fresh Market, a farmer's market which runs every Wednesday from 11:00am to 1:00pm, June through October, in the Cafeteria Courtyard at our Hospital.

Garlic Chicken Wraps

Makes 6 mini wraps

Ingredients

1 bunch of flexible greens

2 chicken breasts

Matchstick cut carrots

Shredded red cabbage, cucumber, cut into matchsticks

pea shoots

1 avocado, sliced

*or any veggies available

Garlic Sauce

1/2 cup unsweetened plain soy milk

1 cup sunflower oil

2 garlic cloves, minced

1 tsp lemon juice

 

Instructions

  1. Preheat BBQ to med-high heat. Alternatively, preheat oven to 425 F. Brush chicken with a little bit of olive oil and sprinkle with salt and pepper. Grill for 7-8 min per side, or bake for 20-25 min until chicken is fully cooked. Remove and set aside, slicing/dicing once cooled.

  2. Meanwhile, blend all ingredients for garlic sauce together in a blender. Sauce should only take 10-15 seconds on high to emulsify and thicken up.

  3. Prepare veggies. Wash greens and lay open flat, gently cutting away as much of the stem in each leaf as possible. Spread with garlic sauce, then top with sliced chicken and the rest of the veggies. Top everything with avocado, then roll everything up into wraps.

  4. Note: make wraps smaller and then eat 2-3 of them in one sitting as opposed to having one big wrap. Easier to eat and fold that way. It's up to you what you prefer - just a tip!
