Farmers Market Frittata

Farmers Market Frittata

Serves: 4 to 6

  • Ingredients
  • 2 tbsp butter
  • Corn kernels from 2 medium ears of corn
  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 8 large eggs
  • ¼ cup while or 2% milk
  • 3 tbsp coarsely chopped fresh herbs,

such as basil, parsley, mint, cilantro or tarragon

  • 4 ounces fresh goat cheese, crumbled
  • 1 cup cherry tomatoes, cut into halves

Directions:

  1. Arrange a rack in the middle of the oven and heat to 400 degrees Fahrenheit.
  2. Melt the butter in a 10- inch skillet over medium heat. Add the corn, ½ tsp of the salt, and pepper and cook, stirring occasionally, for 2 minutes.
  3. Whisk together the eggs, milk, and remaining ½ tsp salt in a large bowl. Stir in the herbs and half of the cheese into the skillet, then pour the egg mixture over top.
  4. Tilt the pan to make sure the eggs settle evenly over all the vegetables/ Top with the tomatoes and remaining cheese. Cook until the eggs at the edges of the pan beginning to set, 2 to 4 minutes.
  5. Transfer the skillet to the oven and bake until the eggs are set, 8 to 10 minutes.
  6. Cool in the pan for 5 minutes, then slice into wedges and serve warm.
